Alice is Executive Head Chef at new Brixton restaurant, Maremma, opening in 2019.
The Maremma, an unspoilt area of Tuscany, is known for both its game and high-quality seasonal produce from an area regarded as the mecca for hunting in Italy, as well as its seafood, stemming from the stretch of coast to the west of the region.
The small menu will focus on simple and seasonal regional specialities with fresh pasta and gnocchi made daily and meat and fish cooked on a charcoal grill.
Wine, none of which are represented yet in the UK, salumi, cheese and olive oil will be imported directly from specially selected Tuscan suppliers so guests can enjoy produce quintessential to the region
